Salmon Jerky Skordialia
6 medium potatoes, peeled, boiled and mashed
3/4 cup sliced almonds, toasted and then finely ground
5 cloves of garlic, minced
6 oz. (3/4 of an 8 oz. package of HOJ) pepper smoked salmon jerky mashed or diced
1 tsp sugar
1/2 tsp kosher salt
1/4 cup white wine vinegar
1/3 cup pure olive oil
Combine the potatoes, almonds, garlic, salmon jerky, sugar and salt. Mix in the vinegar, then slowly drizzle in the olive oil. If the mixture appears to thick to spread easily, add a little more olive oil. It should be a fairly thick paste.
Best served with slices of toasted French Bread
Serves 6-8
